Golden Avocado & Turmeric Omelette with Spiced Crunch Sprinkle

Ingredient Properties & Benefits

Onion & garlic → sweet-savory aroma base.

Turmeric → warm golden color + anti-inflammatory benefits.

Avocado → creamy contrast to fluffy egg.

Himalayan salt & butter → depth and richness.

Sprinkle mix → boosts taste, aroma, and visual appeal.

Extra additions: baby spinach (for color & nutrition) + roasted sesame seeds (for crunch & healthy fats).

Ingredients (1 serving)

Omelette base

2 large eggs

2 tbsp onion, finely diced

1 garlic clove, minced

½ tsp turmeric powder

¼ tsp Himalayan pink salt (adjust to taste)

1 tsp butter

1 tbsp baby spinach, finely chopped (optional but recommended for appearance & nutrition)

½ ripe avocado, sliced or cubed

Sprinkle Mix (makes ~2 tsp, use as needed)

½ tsp roasted sesame seeds

¼ tsp black pepper (freshly ground)

¼ tsp smoked paprika (for color & mild smokiness)

¼ tsp sumac (or dried lemon zest for tang)

Pinch of chili flakes (optional, for gentle heat)

Method

Make the sprinkle mix

In a small bowl, combine roasted sesame seeds, black pepper, smoked paprika, sumac, and chili flakes (if using). Set aside.

Prep the egg mixture

Crack eggs into a bowl, whisk with turmeric and salt until fluffy.

Fold in chopped spinach (if using).

Cook the aromatics

Heat butter in a nonstick skillet over medium heat.

Add onions and sauté 2–3 min until soft and lightly golden.

Add garlic, cook 30 sec until fragrant.

Cook the omelette

Pour in egg mixture, tilting pan so it spreads evenly.

Let cook undisturbed for ~1 min, then gently lift the edges with a spatula to let uncooked egg flow underneath.

When almost set, place avocado slices on one half.

Fold omelette over and cook another 30–60 sec.

Serve beautifully

Slide onto a warm plate.

Sprinkle generously with the spice mix.

Garnish with a small fan of fresh avocado slices on top for visual flair.

Serving Tip

Serve with a side of fresh cherry tomatoes or lightly dressed arugula for extra freshness and color contrast.
